Three aspects of knowledge are required in the development and application of drying technology

Drying refers to the process of adding heat to the wet material and removing volatile moisture (water in most cases) to obtain a solid product with a certain moisture content. For example, when drying a solid, water (or solvent) diffuses from the inside of the solid to the surface and then vaporizes from the surface of the solid. Drying can be divided into natural drying and artificial drying. And there are vacuum drying, freeze drying, air drying, microwave drying, infrared drying and high frequency drying methods.
Although modern drying technology has a history of more than one hundred years of development, it still belongs to the scope of experimental science. Most drying technologies currently lack scientific theories and design methods that can guide practice. In practical applications, relying on experience and small-scale experimental data is still the main way to guide industrial design. Drying technology has a wide range of applications, facing many industries, materials with different physical and chemical properties, product quality, and other aspects. According to the requirements, drying technology is a cross-industry, cross-disciplinary, and experimental science technology. Generally, three aspects of knowledge and technology are required in the development and application of drying technology.
1. It is necessary to understand the physical and chemical properties of the materials to be dried and the use characteristics of the drying equipment products;
2. To be familiar with the principles of transfer engineering, that is, the principles of energy transfer such as mass transfer, heat transfer, fluid mechanics and aerodynamics;
3. There must be implementation means, that is, the engineering design of drying process, main equipment, electrical instrument control and so on.
Obviously, these three aspects of knowledge and technology do not belong to one subject area. In practice, these three aspects of knowledge and technology are indispensable, so drying technology is a cross-industry and cross-disciplinary technology.
